You can sometimes find out what template is being used on pages by viewing the pages html source and looking near the top for something the meta tags that will look something like

Those values are generally output by ShopSite but it is possible for the merchant to not have them displayed on their pages through the way they have their custom templates configured. The name of the template in use will be in the meta name'="ShopSite.com Template ...> line. In the case of the 'home and stuff' store they have disabled the output of the template name so it isn't possible to see what template they are using. Even if there were a template name specified it may not indicate which if any of the ShopSite templates they used as a starting point. In many cases the example stores have created their own templates from scratch and haven't based them on a particular ShopSite provided template.
The best thing to do is to get a demo store and put some of your data and images in it and try the various templates to see which one works best for you. You can get a free demo store at http://www.shopsite.com/demo.html . If you don't want to input your own data you can get one of demos under the "Try a ShopSite Pro, Manager, or Starter Pre-built Online Store" section. The Als Tools is a Pro store, Tina's Toys is a Manager store that have a number of products and features enabled. Go to Preferences >Themes and select a new theme and then publish the store to see the changes.
