Yes, in ShopSite Manager and Pro it is possible to remove and re-arrange the columns that appear for the list of products in the shopping cart via a custom shopping cart template. See the description of the additional parameters available for the [-- SC_Cart --] template tag in the custom template documentation for your version of ShopSite.

Note that you can change the labels above the columns through the text settings in Preferences -> Store Text -> Shopping Cart.
