Is it possible to delete fields in the shopping cart screens?

Customer would like to eliminate a the country code (for example) field from the order form.

The only fields in the order form that can be removed are fields used for the Generic Payment Option payment types. All other fields can only have the names of the fields changed in Preferences -> Store Text -> Checkout.
To remove the field name altogether (the actual field won't be removed, unless it is a Generic Payment Option field) delete the text in the textbox and then enter a space using the space bar on your keyboard. Without the space, the field name will display as the ShopSite default field name for that field.
